Another excellent day!! It's really been a GREAT weekend and I just cannot wait until Friday's weigh-in. This is how it SHOULD be....looking forward to weigh-in's instead of dreading them. I feel good! Hope you do, too!!
After the last 2 rest days, I made SURE I got my exercise in today. I got to the park at 1pm and walked 4 miles. We have a 2 mile trail laid out, and I walked around it 2x. It took me 1 hr. 10 mins to do it. On my 2nd loop, I jumped off the trail and ran over to my car to get my camera. Here's some pics of trail at the park:
Woo Hoo!! FOUR MILES BABY!!!
Next...the food....including Easter dinner, which I totally planned and prepared for ahead of time. I even took my food scale and measuring cup with me to Mom's house, lol....hey...I'm serious about getting this weight off. I'm so sick of the 230's and 240's....I WILL make it to the 220's by the end of this challenge...my goal is 225 lbs. by April 30th and I'm going to rock it all month long!!
Breakfast was at 10am. I had 3 egg whites scrambled w/ 3 oz. grilled chicken breast from the night before. I also added some mushrooms, onions, bell pepper, black olives and 1/8 c. of 2% shredded cheddar cheese. This was DELICIOUS!! Again, no salt...I used Adobo seasoning to flavor it.

At 12pm I tried something new. I found these Ritz cracker/cheese thingies on sale, buy one get one free, so I grabbed a couple of boxes. Love me some processed foods, lol. These were YUM. :)

Before I headed out the door for the park, I threw a Kashi bar in my purse for later. I finished my 4 mile walk at 2:10pm, and ate this driving down the road about 2:20pm. I am in love with these things!

At 4:00pm, I had my all-time favorite fruit...WATERMELON!! I measured out 1 1/2 c. of it.

At 4:30p I was still feeling snacky so I had an overripe banana.

Here's a pic of the baked macaroni and cheese I made this afternoon to take to Mom's house for Easter dinner.
Easter Bunny cake that my mom made...I did NOT have a single bite of it, thank you very much!
Here's what I had for dinner. I was guessing on the potato salad. I emailed Pam and asked her if she thought 400 cals for 1 c. sounded good, and she said it may be a little less, but go with the 400 to be safe. I also guessed that 1/2 c. of mac 'n' chz was around 200. I took my food scale to mom's and measured out 6 oz. of ham. (I looked up the calories on http://www.sparkpeople.com/ ahead of time). I rounded out my plate w/ 1/2 c. of green beans. There were sweet potatoes and yeast rolls, but I didn't have any of those. And yes, I actually measured everything out in a measuring cup at the dinner table before I dumped it on my plate, lol.
Calories: 983
Look at all that food! You'd think I would have been stuffed, right? Nope. The truth is I could have had 2 plates that size. At that point I would have been miserable, yes, but in my pre-weight loss days, I would have eaten 2 full plates w/o even batting an eye. Tonight, I stuck to my calorie plan and I'm very proud of that. It feels good to be in control.
I'll be ending my night w/ 2 c. of decaf coffee w/ 2 Tbsp of sugar-free creamer, which is 30 cals.
Total Calories: 1698
Water Intake: (4) 32 oz. glasses
Exercise: Walked 4 miles at park in 1 hr. 10 mins.
This is the end of my 3rd fantastic day...I'm on a roll!! Hope all of you are, too. 3 days down...27 to go....and our first weigh-in is only 4 days away...I can't wait!!! :)
