Things Are Looking Up

Not much to report tonight.  Two good calorie days in a row now, thank God.  I took a rest day from the gym.  I was going to post a pic of some tuna salad I made the other day.  The nutritionist looked at my food sheet and told me I'm not eating near enough complex carbs.  I told him I eat a ton of veggies, does that count?  He said no, veggies are mostly water anyway....he said complex carbs as in beans, rice, pasta, baked potatoes.  I told him I cut almost all of that stuff out of my diet a long time ago to get my diabetes under control.  And it worked.  I came off of all my meds.  He said it sounds like I'm trying to do the Atkins Diet and proceeded to smugly tell me that Dr. Atkins is dead, lol.  He said I need at least 300g of complex carbs a day and that if I don't get enough I'll screw up my pancreas.   Complex carb intake is directly related to your pancreas?  Who knew?

Fine.  Whatever.  So I made some tuna salad with some whole wheat rotini in it.  I threw in some diced cucumbers and tomatoes to sneak a couple of veggies in, as well as some chopped onion and dill pickle, and mixed it up with some lite mayo.  I'm also posting a pic of the socks Leslie knitted and mailed to me.  She mentioned wanting to see me wearing them, so Leslie, this is for you.  :)

  4. I'm sure the complex carbs thing may have some validity, but kicking diabetes is pretty awesome too, so I'd get your doctor's opinion as well before just following nutritionist man's opinions.

    Delicious salad;o)

    I eat three bean and five bean salads, and I love them, never ever thought I would eat beans but I am a complete convert. My favourite pub serves a great bean chilli and rice. My diabetes is now below diabetic levels and that is one of the things I am most proud of in this journey.

  8. Those socks are fly! You should still be able to keep your diabetes under control with one or two servings of complex carbs a day. It's just when you're eating too much, and too many of the simple carbs, that it's a problem for diabetics.

  10. Hi Tammy! Congratulations on 2 good food days! What a beautiful set of feet 'ya got there, lady! And your tuna pasta salad looks good! I'm going to make something like that today...I need a break from soup, stew and roasted veggies. And I didn't know either about complex carbs and the pancreas! My nursing education omitted that little piece of info. Have a great day - and thanks for showcasing the socks =D !

  14. your tuna salad looks yummy!!!! I have been on a peral barley kick lately. I add it to soups, or mix it into oatmeal. Quinioa is one of those things I have been wanting to try but never have, but I hear great things about it.

    Oh, and I LOVE Vickies socks!!! They look so cozy!!

  16. Most people think Dr. Atkins died from too much fat and too little carbs in his diet, I hear he actually died from a fall?

  18. Is your nutritionist a doctor? If not, then I would stick with what you're eating, especially if you have a medical condition like diabetes. Maybe you need to find a nutritionist that specializes in diabetes.

  19. Hi Tammy. Is this a fully qualified person? Most people who call themselves nutritionists are not properly qualified to give out anything other than very basic advice that you could read in any magazine.

    If you're going to add a load of carbs to your diet then maybe it might be a good idea to test your glucose levels regularly and see what happens.

  20. The salad looks good. I can believe the part about the complex carbs, and especially in conjunction w/your involved workouts.

    How can I get me some of those socks? Does Leslie mention them on her blog? Guess I can go check that out myself, eh.
