Temp Agency





Happy Friday!  I have 2 weigh-in's this morning.

Last Friday I weighed 241.2 lbs. and this morning I weigh 240.4 lbs., for a loss of .8 of a lb.

Then on Monday, I had to weigh again (after a weekend of too much sodium) and take a pic of the scale reading for the start of Kandice's Summer Challenge.  Monday I weighed 243.6...this morning I'm 240.4, for a loss of 3.2 lbs (this only applies to her challenge).  We had to weigh Monday to get started but now we're back to normal Friday weigh-in's.

Anyhoo...I didn't gain on a cycle week.  I'm satisfied.  :)

I've got an appointment with a temp agency this morning at 10:45am.  This is the first one I've signed up with in several years.  I'm hoping they can put me to work quickly, so say your prayers! :)

I'm having a Memorial Day cookout here on Monday.  Shane, Billie & Kandice are coming to eat with Dwayne and I.  I need some healthy options for us girls so does anyone have any ideas of some low calorie side dishes I can make?  Dwayne will be grilling burgers (and chicken burgers for us girls)...and I'll have a fresh veggie tray and fresh fruit tray, some coleslaw with lite mayo & lite sour cream (a recipe I found in my new cookbook)......and I have to make baked mac 'n' chz for Dwayne....since he doesn't eat any veggies.  But I'd like an idea for 1 or 2 more side dishes that are low calorie, so if you know of something simple and tasty, please let me know!

    How about a nice bean salad with cut of veggies and a vinaigrette dressing? I made one last weekend with kidney beans, garbanzos, and black beans (all rinsed) and then added shredded carrot, celery, scallions, radishes and whatever other chopped stuff I had on hand. Pretty yummy and healthy. If you like it a tad sweet you could use a little pickle relish or a packet of splenda.

    Sorry but I am stymied on the side dishes. Maybe grilled veggies? Grilled fruit is excellently delicious, too. Yeah... Big help, I know. lol

  9. I hope the temp agency thing goes well...

    There are some great salsa recipes on the web. I make one that has black beans, corn, red pepper, cilantro,lime juice, etc... Those type of salsa are low cal and so good.

  10. Oh I sure hope the temp agency calls you...and that you get to do something fun too! Have fun on your holiday too...I'm not much of a cook so I don't have any recipes to share. lol I'm not sure how much fun my own Memorial Day will be with all the stuff going on at my house, but I will at least try not to binge. *smile*

  11. We're going to a bbq on Friday, and I'm going to bring chicken shish kabobs, and fruit shish kabobs. I was also going to cut tomatoes in half, and melt low-fat cheese on top. And maybe some corn on the cob!

    Good luck with the temp agency AND the cookout! Right now we have no plans but our extended families are pretty well known for last minute ideas so I should probably go make something just in case.

    Our typical standby is a pasta tuna egg salad. I've never used a recipe for it ... just always just toss stuff in until it looks/smells/tastes like my mom used to make it :)

  13. i love me a good cucumber/tomato salad.. both cut in nice chunks, with dill, lemon, apple cider vinegar and a wee bit of seasalt. mmmm

I love having veggies as a side dish..One of my favorites is green beans with tiny tomatoes. :) Add cooking spray to a pan, toss in the tomatoes so they get soft and a little wilted..then add the green beans and cover it so they have a few minutes to cook. Then add a little seasoning either FF Italian dressing or just a little seasoned pepper. It's tasty and totally good for you. :)
