Monday's Food Pics

I did a 2 mile walk at the park yesterday since it was so pretty outside and Billie wasn't able to go to the gym with me. We're going to the gym tonight at 6:30 this evening though for some good cardio and weight machines. My calories today are 1300 and I'm done eating for the day. Had a little too much fun over the weekend and need to shave a few off for the rest of the week.

Here's some bbq pork ribs and butternut squash w/ cinnamon and nutmeg that I baked last week and forgot to post the pic:





Today my mom, sister Amy and nephew Cyress came over for lunch. We made shrimp quesadillas with shrimp, cheese, spinach & fresh salsa on whole wheat 50 calorie tortillas. This was the first time I've ever made these at home and they were delish!






Dinner was a scrumptious stir fry w/ turkey sausage, yellow squash, onions, mushrooms, carrots and bell peppers.






I'm headed to the gym soon so I've got to wrap this up. Hope everyone else has had a yummy Monday! :)

  4. Love that butternut squash, as I told you my favorite veggie ever!

    Well done on the 2mile walk...Its too cold this side of the world to walk outdoors...well for me anyway, remember I come from Africa and am used to lovely hot weather...the Germany's are still out walking, the kids play outdoors, mom push their babies in prams and I look and think they all crazy....LOL

  8. The turkey sausage stir fry looks real good. I have never thought to do that with turkey sausage, so now I know I must try this out. It's good that you are enjoying the gym. I work out with hand weights for my arms. Floor work is impossible since I have two total knee replacements, and getting down to the floor hurts. Keep up the gooe work, and great attitude.......hugs, Kathleen

  10. I am so glad you like to cook! The food looks fantastic! I will have to try that stir fry. I have never tried turkey sausage, so that may be a great way to try it out. Thanks for the great idea.
