This is the 4th day in a row and I feel FANTASTIC!!!! I'm on my 2nd day of exercise, with only 3 more to go before weigh-in...no problem!!
I knew the time would come when I would forget to take a pic of one of my meals and today was the day! I took a nap this afternoon. What was supposed to be an hour turned into 2 hours. I woke up at 5:15pm and was supposed to meet Billie at the gym at 6pm for our workout. My original plan was to eat dinner before I left, because I don't usually get home til 7:30-8pm and I don't like eating that many calories that late. I threw on my gym clothes, rushed out the door and got on the road, and then realized I now didn't have a plan for dinner, or a camera to take a pic of whatever I decided to grab on the run. Fast food is obviously out, but the next best thing in my book w/o getting totally horrendous is Subway. I stopped by there and checked out their calorie menu that they have posted in all their restaurants (thanks Subway!). I had a good bit of calories to use (700 or so), so I got a 12" on wheat, turkey, spicy mustard w/ lettuce, tomatoes, cucumbers, onions, a couple of banana peppers & pickles (gotta' watch the sodium!), and some oregano sprinkled on top. NO oil & vinegar, no salt, no mayo & no cheese. The calorie count for a 12" turkey is 560. I added 30 for veggies (guessing).
Breakfast was at 8:30am..another egg white scramble...can you tell I love these things? I used 3 egg whites, 4 oz. of grilled chicken breast, a few mushrooms, onions, bell peppers & 1/8 c. of 2% shredded cheddar cheese. Again, I used Adobo seasoning to flavor it...no salt.

At 11am I had a sandwich made with a whole wheat sandwich thin, 4 oz. of Boar's Head 47% lower sodium turkey breast, a slice of 2% American cheese, pickles, and 1 Tbsp of lite mayo w/ dijon mustard.

My sister Amy, who lives next door to me with my parents, gave me a great idea for a meal this week when she helped me with my menu planning last week. I had a pork tenderloin in the freezer, and she suggested I stuff it with some yummy stuff, tie it up, and roast it in the oven. I've never stuffed or tied any meat before, but I went to Publix over the weekend and got some twine from the guy in the meat department so we could make the tenderloin. She came over today and helped me put it together. I took some pics!
She sliced it open and flattened it out. Then she spread some minced garlic on it and I sprinkled some Adobo seasoning next. We added sliced fresh mushrooms (3 of them), 1 oz of sun-dried tomatoes, 1/2 c. of garlic & herb feta cheese (Heaven), and 2 c. of fresh spinach.
I checked the calorie count on the package the tenderloin came in and it said 4 oz are 100 calories, but when I looked for # of servings, it said "varies". Hmm...lol...never seen that on a package before. So I wrapped it up in a paper towel and put it on my food scale. It weighed exactly 20 oz, so the whole tenderloin was only 500 cals. Not bad!! I know...it looks really gross before it's cooked, lol. Right before we popped it in the oven, Amy suggested I use at least a little bit of salt on the outside...so I sprinkled some salt, pepper & thyme on the top. The package said to cook it on 375 for 35 mins. I did that. Still raw, lol. I bumped the temp up to 400 and cooked it another 25 mins. Still not done. Damn! So I cooked it another 30 mins (1 1/2 hrs total at this point), and it came out fantastic!!! So tender and the inside was so incredibly flavorful. This was by far the best-tasting thing I've eaten in a LONG time...and it took very few ingredients. I'll definitely be making this again!
The entire pork roast w/ stuffing was only 794, so I ate half of it all by myself!! I took the other half next door so Amy could enjoy her delicious creation, too. I had 1 c. of steamed broccoli with mine. I ate it about 3pm.

EEK!! I just realized while I was typing out this post that I completely FORGOT to add in the calories for my broccoli into my daily total. DAMN IT!!! I'm over for the day...grrrrrr....I'll post the total calories at the bottom. If you count calories like I do, write EVERYTHING down! lol
I had another new item today. I bought some Chobani greek yogurt, 3 flavors, for the first time this past weekend. I wanted to see what all the fuss was about over greek yogurt. Today I tried the pomegranate...biting into the seeds was a little weird, but the flavor and the creaminess of the yogurt was DELICIOUS!!! I'll be buying it again, for sure. I had this while I was waiting on the pork tenderloin to cook.

After I got home from the gym, I was craving some fresh fruit, so I measured out 1 c. of watermelon and 1/2 c. of strawberries around 8pm.
Calories: 73
At 9pm I had my usual 2 c. of decaf coffee w/ sugar-free Hazelnut creamer. Since I forgot to take the camera with me for my Subway turkey sandwich, I decided to take a pic of my coffee for you, lol. I use raw Stevia to sweeten it...zero calories. The 2 Tbsp of creamer totaled 30 cals.
Calories: 30
Total Calories: 1806 (forgot to add in the broccoli today, I'm so pissed, lol)
Water intake: (4) 32 oz. glasses
Exercise: 1 hr 15 mins at the gym - 30 mins weight training/45 mins cardio
Hope everyone is feeling inspired and doing great!! If you ate too much yesterday at Easter dinner...forget about it and move on. It's in the past, so leave it there. Look ahead friends!! We still have PLENTY of days left in this challenge for every single one of you to reach your 10 lb. goal. I have faith in all of us...we can do this and we WILL do this!! Looking forward to a terrific Tuesday! :)

Don't beat yourself up over 6 damn cals girl! It was still a great calorie day. And since you went over and you don't normally maybe it will give your body a shock and you will lose. I ate horrible on Sunday and I still have lost 2 lbs since Friday already. And I was looking at the pickle jar in the fridge today and it said 0 cals!!! WTF??? That is insane. I love pickles and I am always craving crunchy salty things and pickles are a great snack if you don't overdo the salt anywhere else. It was a great day so be happy. You may have gone over your calls by 6 measly cals but you didn't eat anything that was bad for you, it was all healthy food.
ReplyDeleteLMAO! i agree with Desperately Seeking...I was thinking, "Where is she over?!" I say, WELL DONE! I had some sweets today - for the first time in over a week, but they are still part of my allowed foods (from the Fat Smash Diet). Worked out twice today...serious calorie burn. I normally lose weight so SLOWLY, I am hoping for big numbers though!!!

Thumbs up for pork tenderloin! That looks like a great recipe. The broc couldn't have added more than 30 calories which is like a rounding error in measuring out most calorie counting meals so don't sweat it.

I've started to be accountable with my food lists, but I don't think that I have the time for the photos. Maybe if I have something really exciting! That pork looks awesome. Yummy!!

ReplyDeleteI did want to tell you that Adobo has salt in it...some brands have a LOT more than others, so much you can taste the difference.
Check the label, and if you truly have some that is salt free, please tell me what it is so I can look for it, because I have never seen it!

If broccoli is your only caloric enemy, you are doing GREAT!! The food looks absolutely wonderful. You are becoming quite the gourmet.

ReplyDeleteI wouldn't worry about going over your calories with broccoli. I know a few people who count calories but don't include their veggies in the count. You can never have too much broccoli.

ReplyDeleteLuckily for me Easter dinner wasn't anything especially delicious so I wasn't even tempted to overeat. It was a processed ham (oh boy!), some mashed potatoes and steamed broccoli. Nothing I can't have any other day. Your pork tenderloin looked much more delicious.
