Beach Challenge Food Pics Day 12


WOW!!!  Can you believe it's Day 12 of the challenge already??  We're almost halfway done!! 

I didn't get to do my exercise today due to my cycle (PCOS cramps).  I know me talking about this to you is TMI, but as I said, I'm recording EVERYTHING for all 30 days of this challenge, and this is part of it.  In fact, it's the most difficult part of it for me, so it's important.  I decided not to beat my ovaries up with any exercise today, and hope I'm able to get some done tomorrow. 

Breakfast was at 8am.  I had a Chobani pineapple yogurt and I measured out 1 c. of watermelon.  However, watermelon is like crack to my puppy Scarlette, so she ate half of it, lol.  That makes 1/2 a c. for momma.  :)

I had to do some running around today and was gone for several hours.  I took a Ritz cracker thingie with me on the go (took a pic of it before I threw it in my purse), and was gone right through lunch, too, so I went with my standard Larry's subs because I know the calorie count and it doesn't give me sodium issues on the scale.

Around 2:30 I got back home and had a sundried-tomato & basil chicken sausage that I baked in the oven.  I sauteed a couple of fresh mushrooms & a few strips of onion & bell pepper in some Pam olive oil cooking spray on the stove, and added those to my sausage with a little dijon mustard, served on a whole wheat bun.  This was delicious!

About 3:30p I was going to have a boiled egg.  I keep 3 or 4 of them in the frig for snacks or tuna salad, etc.  But I decided deviled eggs sounded better.  So I put the yolk in a bowl with 1 Tbsp of lite mayo, made my deviled eggs & added a sprinkle of paprika on top.  Yum!

Dinner was at 5pm and this ends my food for the day.  I had a 6 oz. piece of cod that I added 1 Tbsp of lemon pepper marinade to & sprinkled with a little dill.  I broiled it for 15 mins.  Also, some stewed squash and grilled zucchini.  Excellent meal!

I'll have 2 c. of decaf coffee w/ 2 Tbsp of Coffeemate sugar-free hazelnut creamer around 7pm tonight, and finish up my water.

A few people have asked me about my food prep, etc.  I don't do all this cooking every day, lol.  Forget it!!  Sundays are usually pretty quiet for me, so I spend about an hour on Sunday afternoons cooking up several different veggies for the week, as well as boiling some eggs to keep in the frig.  Last Sunday I boiled my eggs, grilled some asparagus and zucchini on the Foreman, steamed some broccoli & boiled some yellow squash.  It makes it so much easier to make the right choices during the week when the food is right there in the frig, cooked and readily available.  That way, the only thing I have to worry about is the meat.  Fish is obviously super easy.  I buy it frozen when it's on sale at either Kroger or Publix, then lay it out about the middle of the day to let it thaw for 2-3 hours.  You can also cook it straight from frozen.  I've done that before and it turns out just fine.  It only takes 10-15 mins to cook when you put the oven on broil.  I don't cook fish on my Foreman grill.  I tried that ONE time with a piece of tilapia and in 5 mins flat it withered away to nothing!!!  Bad idea, lol. 

I also make 3-4 chicken breasts in the oven on Sunday to use in my egg white scrambles through the week.  Chicken is a little less salty than other breakfast meats, like Canadian bacon, regular bacon, ham, turkey sausage, etc.  I do use those other items sometimes...just not as much as the chicken.  I also cut up some fresh fruit on Sunday and put it in storage containers in the frig, such as watermelon, pineapple, cantaloupe, strawberries, rinse some grapes, etc.  That way all I have to do is grab a measuring cup & pour it in a bowl! 

Also, frozen veggies are a great idea!  I've been buying the Steamfresh varieties because Publix, my favorite grocery store, puts them on sale sometimes for 50% off, or buy one get one free, and the Sunday paper has coupons on Steamfresh items EVERY WEEK.  Not to mention, my store doubles coupons!!!  It takes about 3 mins to steam them in the microwave.  Cheap and easy....what's better than that?!



And the brown rice that I used earlier this week was also Steamfresh!  Soooo easy.  The bag has 2 c. in it.  I use 1/2 c. at a time for 75 calories.  There's no sauce or anything added to it....just plan ol' brown rice.  It works great! 




I just didn't want to give anyone the wrong idea and make them think I slave away in the kitchen all day.  I don't.  I just do about an hour's worth of prep on Sunday afternoon and that makes the week go smoothly.  I've said before that planning and prep are KEY and it's so true.  I hope these tips help!! 'Nite friends.  :)

  4. Thanks so much for posting this. I'm struggling right now with menu planning and being prepared. Sometimes I find myself grabbing stuff that I probably shouldn't eat, just because I'm STARVING and not sure what else to eat.

  5. I hear you food prep has definitely been a life saver for me also. I tend to prepare my lunches for work the night before so I am not scambling in the morning or have to buy. Keep up the great work and don't let this time get you down.

  7. Hi Tammy. You're certainly cooking up some really good food. Personally I can't cook anything in advance as I just tend to eat it in advance as well! It's a real pain that I have so little control. Food has to be kept raw until I'm about to eat it. For that reason I prefer fish as it cooks so quickly.

    All in all I think you're doing incredibly well!

  8. Yipes! I hope that you are feeling better, tomorrow. I have read about PCOS and it sounds like a real challenge to live with. I think that you are handling it very well.

    Thanks for posting about Steam Fresh brown rice. I have to get some of that. I suck at cooking rice myself and the Minute Rice in the little cups is loaded with stuff I really don't want.

    I do buy and eat the Steam Fresh veggies. I like them, tho I tend to go fresh, whenever I can. :D

  9. I really need to try those steamers and start doing prep on the weekends then I won't be spending 2 hours a night deciding what to eat and making it. Besides my son everyone else if pretty easy and eat what I make.

    You are doing great on your challenge - I should have done it but suck at challenges and this month has been tough for me.

    I always find it hilariosu when pets eat food you wouldn't expect them to, like watermelon. We have a dog that eats salad. And BTW the Birds Eye Steamers are GREAT! I recommened the Baby Peas and Mushrooms, if you haven't tried em yet.

  13. Good job on all of the food prep! I'm a wee bit jealous because our store does not have all those great choices. All this means is that I have to usually do a bit more prep--like actually steaming the rice ahead of time in the steamer, and chopping and cleaning veggies myself. Planning does make a big difference.
